When you make your next cup of green tea, DO NOT add boiling water to the teabag or loose ingredients in the teapot.
Allow the water to cool to a temperature of about 70-80 degrees before adding a teabag to a cup, or loose green ingredients into a teapot.
Allowing green tea to brew at a lower temperature gives the tea a smoother, sweeter flavour. Reducing the bitterness caused by the polyphenols, or tannins.
Once the water is in the cup or pot. Allow about 2-4 minutes infusion time, depending on which green tea you are using.
